Hasselback potatoes

Hasselback potatoes

The classic Hasselback potato is a simple yet elegant dish made with just potatoes, butter, salt, and breadcrumbs—or panko for extra crispiness. The thin, fanned slices allow for a perfectly crispy exterior while keeping the inside soft and fluffy. While the traditional version is a timeless side dish, perfect alongside meat and a rich sauce, you can easily elevate it with herbs, garlic, or parmesan for extra flavor.

Ingredients

potato, waxy — 800 grams
salt — 1 teaspoon
butter — 50 grams
breadcrumbs — 2 tablespoons

Directions

1.

Peel the potatoes and trim a small piece from the bottom so they sit flat. Slice them as thinly as possible without cutting all the way through.

2.

Place the potatoes, cut side up, in a baking dish. Melt the butter and brush the potatoes. Save enough to brush once or twice more. Salt the potatoes.

3.

Bake in the middle of the oven at 225°C (440°F) for about an hour. Brush with butter every 15 minutes, and sprinkle with breadcrumbs halfway through. After adding the breadcrumbs, be careful not to displace them when brushing with butter.
